When authorities break into a phone with the cellebrite device or something similar are they cracking full disk encryption, just going around it with some backdoor or do they have the encryption master keys? What is going on?

Recently saw some press release bragging about how the cops can crack almost any phone, even the latest, in minutes.. wondering what is actually transpiring there in regards to full disk encryption?
